Chocolate Bavarian Torte (Grandma’s Recipe)

This showstopping Chocolate Bavarian Torte layers rich, decadent chocolate cake with a velvety, smooth cream cheese filling and delicate semisweet chocolate shavings. It is an elegant, old-school dessert straight from Grandma’s journal that looks like it came from a high-end bakery but is incredibly simple to make at home.
Why You’ll Love Grandma’s Chocolate Bavarian Torte
A True Crowd-Pleaser: Grandma loved making this whenever we were craving a rich chocolate fix. Whenever she brought this stunning torte to family reunions or church gatherings, she would get a huge number of requests for the recipe!
Decadent Yet Light Texture: The combination of rich devil’s food cake and an ultra-creamy, pillowy Bavarian-style cream cheese filling creates a melt-in-your-mouth texture that isn’t overly heavy.
Looks Beautiful, Effortless to Build: Because you split the layers horizontally and stack them with fluffy cream and grated chocolate, it naturally looks like a masterpiece once sliced.
The Ultimate Make-Ahead Dessert: This cake actually gets better as it sits! Making it the day before gives the rich flavors time to marry together perfectly in the fridge.
Grandma’s Cooking Tips for Perfect Bavarian Torte
The Clean Cut Secret: Splitting a cake horizontally can feel intimidating, but Grandma’s trick is simple: let the cakes cool completely first. Use a long, sharp serrated bread knife and gently saw through the center while keeping your other hand flat on top of the cake to guide it.
Grate with Ease: To get perfect, delicate semisweet chocolate shavings without the chocolate melting in your hands, pop your chocolate bar into the freezer for about 10 minutes before grating it.
Give it Time to Set: Do not rush the refrigeration time! Letting the torte chill for at least 8 hours (or overnight) is what allows the cream filling to firm up so your slices come out clean and gorgeous.
What to Serve with Chocolate Bavarian Torte
This rich, elegant Southern favorite is a spectacular finale to any special dinner. Turn it into an ultimate dessert display by pairing it with:
- Warm Beverages: Balance the deep chocolate and sweet cream flavors with a steaming mug of black chicory coffee, a robust dark roast, or a hot cup of spiced tea.
- A Sunday Feast: Serve this as the grand finale after a traditional family menu featuring our Southern Stuffed Yellow Squash and crispy Southern Fried Chicken.
- If you love old-school family desserts but are looking for a warm, fruity option instead of rich chocolate, you absolutely have to try Grandma’s Old-Fashioned Southern Peach Cobbler.
