Why You’ll Love Grandma’s Potato Dumplings

This heritage recipe is a staple in home kitchens for good reason:

  • Pillowy Soft Texture: Light, tender, and delicate, these dumplings melt in your mouth without feeling heavy or dense.
  • Great Way to Use Leftovers: The absolute best recipe for transforming yesterday’s leftover chilled mashed potatoes into a brand-new, exciting meal.
  • Simple Pantry Ingredients: Made with basic, affordable staples like potatoes, flour, egg, and classic seasoning—no special grocery run needed.
  • Versatile Comfort Side: The ultimate companion for pot roasts, pork chops, roast chicken, beef stew, or rich mushroom gravies.

Grandma’s Secrets for Perfect Potato Dumplings

Getting that tender, cloud-like texture without the dumplings falling apart comes down to a few traditional vintage kitchen tips:

  • Use Cold Mashed Potatoes: Warm or freshly mashed potatoes contain too much moisture, which requires adding excess flour and leads to tough dumplings. Cold, leftover mashed potatoes hold their structure beautifully with minimal flour!
  • Don’t Overwork the Dough: Mix your dough just until the flour and egg are incorporated. Over-kneading develops gluten, which makes dumplings gummy rather than light and fluffy.
  • Maintain a Gentle Simmer: Never drop dumplings into a hard, rolling boil, as violent bubbles can tear them apart. Keep your salted water at a gentle, steady simmer.
  • Watch for the Float: Dumplings let you know when they are done! Once they float to the top of the simmering water, let them cook for just 2–3 additional minutes to ensure they are cooked through to the center.

Equipment

  • 1 15x10x1 inch baking pan
  • 1 whisk
  • 2 large spoon
  • 1 small bowl
  • 1 dutch oven
  • 1 toothpick
  • 1 small saucepan

Ingredients

  • 2 day old hard rolls
  • 1 large egg, lightly beaten
  • ½ cup leftover mashed potatoes
  • 2 Tbsp all-purpose flour
  • ¼ cup butter, cubed
  • ½ cup water
  • 2 tsp canola oil
  • a dash of ground nutmeg

Instructions

  • tear the 2 day old hard rolls into ½ inch pieces. Place in the 15x10x1 inch baking pan. Drizzle with water and squeeze dry.
  • In the large skillet heat the oil over medium high heat. Add the torn rolls. Cook and stir until lightly toasted for about 1 to 2 minutes.
  • In the small bowl combine the eggs, nutmeg, bread and potatoes. Make sure to add enough flour to achieve a shaping consistency.
  • With your hands floured, shape the mixture into 3 inch balls.
  • Fill the dutch oven ⅔ full with water. Bring to a boil. Carefully add the dumplings. I use a large slotted spoon, to keep from splattering the hot water.
  • Reduce the heat and simmer uncovered, until a toothpick inserted into the center of the dumplings comes out clean about 8 to 10 minutes.
  • In a heavy saucepan, melt the butter over medium heat.
  • Heat until golden brown about 4 to 6 minutes.
  • Serve the warm dumplings with butter.
