If you are looking for a fun, eye-catching side dish that tastes every bit as delicious as it looks, Grandma’s Easy Two-Tone Baked Potatoes are an absolute winner. Combining fluffy white Russet potatoes with naturally sweet Yukon Gold or sweet potatoes, this recipe blends two classic flavors into one creamy, twice-baked favorite.

Whether you are preparing a cozy weeknight dinner or looking for a memorable side dish for family gatherings, these stuffed potatoes deliver incredible flavor with very little effort.

Why You’ll Love These Two-Tone Stuffed Potatoes

Twice-baked potatoes are always a crowd-pleaser, but combining two different potato varieties takes them to the next level!

Great Make-Ahead Dish: You can assemble and fill the potato shells a day in advance, wrap them tightly, and keep them chilled in the fridge until you are ready for the final bake!

Stunning Visual Appeal: Swirling two distinct potato colors—like warm golden Yukon Golds or rich orange sweet potatoes alongside classic Russet fluff—makes this dish look like it came straight from a steakhouse.

Rich & Creamy Texture: Mashing the scooped-out potato flesh with sour cream, butter, and savory seasonings gives you a silky filling that bakes up soft with lightly crisp edges.

Tips for the Best Twice-Baked Potatoes

Getting the perfect texture for your potato shells and filling is super easy when you follow a few simple tricks:

Piping or Swirling the Fillings: For that signature “two-tone” look, you can spoon the two mashed potato mixtures side-by-side into the shells, or load two separate piping bags (or ziplock bags with the corner snipped) to pipe them together!

Bake Until Piercing-Tender: Ensure your potatoes are fully baked through before scooping. A fork should easily slide right into the center so the flesh scoops out smoothly without tearing the skin.

Leave a Sturdy Rim: When scooping out the potato flesh, leave about a 1/4-inch border of potato along the inside skin. This creates a sturdy “boat” that holds its shape when loaded up with filling.

How to Serve and Customize

Toppings & Garnishes: Top warm potatoes with fresh chopped chives, crisp crumbled bacon bits, melted cheddar cheese, or a dash of cracked black pepper.

Pairing Ideas: These make a hearty side dish alongside grilled steaks, roasted chicken, pork chops, or a crisp green side salad.
