This best super delicious meatloaf recipe is one of the first things I learned to make as a young girl. When I first started making this meatloaf it was a slightly different recipe. However, I decided to tweak it until finally, I came up with my own version. Sorry, Mom and grandma but I do like my version more.
I actually did not make too many changes to the original super delicious meatloaf family recipe. Simply speaking, just added tomato puree instead of the tomato sauce that Mom and grandma use to use in theirs.
What type of topping goes on the meatloaf
Since I only used, about half of the can of tomato puree in the meatloaf I also decided to add the remainder of the can to the top of the super delicious meatloaf vs the ketchup that mom and grandmas use to use on the top.
I know that I have seen a lot of people that are squeamish about putting their hands in the meatloaf to mix it up.
However, I do definitely understand, I have a sister who still thinks she can use a spoon and all the ingredients will be well mixed.
Well, all I can say about that is “suck it up buttercup”. You’ll get over that feeling once you taste this fantastic creation of yours. You do definitely need to get down and dirty and use your hands to incorporate these ingredients thoroughly.
Super Delicious Meatloaf
- 1 large bowl
- 1 teasspoon
- 1 chopping board
- 1 knife to chop onions and peppers
- 1 can opener
- 1 large casserole dish
- 1 liquid measuring cup
- 1 roll aluminum foil
- 1 set pot holders
- 1 large spoon
- 2 lbs ground beef or ground chuck
- 2 lage eggs
- 1 can tomato puree
- ½ tsp salt
- ½ tsp pepper
- 1 medium onion chopped
- 1 medium green pepper chopped
- Preheat your oven to 350 degrees. In a large bowl place the ground beef.
- Gently crack and place the 2 eggs into the bowl with the ground beef, add the salt and pepper.
- Take the chopping board and chop up the green pepper and place in bowl with the ground beef.
- Still using the chopping board chop up the onion and place the chopped onions in the bowl.
- Open the can of tomato puree and pour about half the can on top of this mixture. Now with your hands, mix this mixture till well blended.
- Place the casserole dish beside the mixture and mold the mixture into a round shape. Then place the rounded shape into the casserole dish. Add about a cup of water to the casserole dish, cover with foil, and place into the preheated oven. Next, allow the mixture to bake for about 1 ½ hours.
- Remove the meatloaf from the oven and place the remaining tomato puree on the top. You can either spread it with a fork or a spoon. Let the meatloaf bake for about another 30 minutes. Remove from the oven, slice, and serve.
What I really love about this recipe is that you do not have to babysit this super delicious meatloaf while it is cooking.
Once placed in the oven it is okay if you go do laundry, read a good book, or watch a movie. Your choice. Just set a timer and when the timer goes off it is ready, and it is oh-so-delicious.
I really love making this recipe and do feel that it is as healthy as it is great looking. I make this all the time for get-togethers, Sunday dinners, and any time of the year.
