Ingredients 

  • ¼ cup all-purpose flour
  • 6 4 ounces each boneless skinless chicken breast halves
  • ½ tsp salt
  • 2 tbsps plus 1 tsp olive oil divided
  • 3 cloves garlic minced
  • 1 tbsp minced onion
  • cups whipping cream
  • cup grated Parmesan cheese
  • ½ tsp ground black pepper
  • 1 tbsp chopped fresh parsley

Instructions

  • Preheat the oven to 375F. Place the flour in a shallow dish. Sprinkle the chicken with salt, and coat with the flour. Heat 2 tablespoons olive oil in a large skillet over medium-high heat till hot. Add the chicken, cook it turning once, until it is golden brown, about 4 minutes per side. Then remove the chicken from the skillet and place it in a 13 x 9-inch baking dish.
  • Heat the remaining olive oil in the same skillet over medium heat until it is hot. Then add the garlic and onion, and cook until garlic is fragrant and the onion is tender about 2 minutes. Turn the heat up to medium-high, add the whipping cream, Parmesan and the pepper. Cook this mixture till the sauce is bubbly and slightly thickened for about 3 minutes. Then spoon the sauce over the chicken in the dish.
  • Bake the chicken until an instant-read thermometer that is inserted into the center of the chicken shows 180F, about 12 minutes. Sprinkle this with the parsley and enjoy.

Notes

Helpful tip:  It is really important not to use milk in this recipe but to be sure to use whipping cream because the fat content helps to keep the sauce from separating and gives it the rich flavor.
