Also known as German pancakes or Dutch babies, this nostalgic breakfast treat bakes entirely in the oven, dramatic and golden-brown, with beautiful tall ridges that form right before your eyes.

It is incredibly light, airy, and custody in the center—making it the ultimate special-occasion breakfast for lazy weekends, holidays, or family brunch without the stress of flipping individual pancakes at a hot stove! If you’re looking for a crispy side to go with your breakfast sandwich, try Grandma’s classic Roast Beef Finger Sandwiches.

Why You’ll Love Grandma’s Puff-Up Pancakes

No Flipping Required: Say goodbye to standing over a hot griddle flipping pancakes one by one while the first batch gets cold. You pour this entire batter into a single pan and let the oven do 100% of the work!

A Magical Table Presentation: Watching this pancake dramatically swell and rise above the edges of the pan is half the fun. It is guaranteed to bring “oohs” and “aahs” from the kids and guests alike when it comes out hot.

The Perfect Custard-Like Texture: It perfectly balances a crispy, golden outer edge with a delightfully soft, tender, and slightly custardy center that pairs beautifully with fresh fruit or syrup.

Grandma’s Special Tips for the Perfect Puff-Up Pancake

Get the Pan Smoking Hot: The ultimate secret to getting that dramatic, sky-high puff is pouring your cold batter into a preheated, sizzling-hot pan with melted butter. Drop your baking pan or cast-iron skillet into the oven while it heats up so it is ready to blast the batter with heat instantly!

Blend Until Completely Smooth: Whip your batter in a blender for a full 30 to 60 seconds until it is totally uniform and slightly frothy. This incorporates the air bubbles needed to help the eggs lift the pancake high into the air without needing baking powder.

No Peeking Allowed: Keep that oven door completely shut for the first fifteen minutes of baking! Opening the door lets out a rush of hot air and steam, which can cause your gorgeous, growing pancake to deflate prematurely.
