Grandma’s Tips
Soften the Cream Cheese: To make sure your filling is perfectly smooth and spreads evenly without tearing your tortillas or wraps, let your cream cheese sit on the counter to soften completely before mixing. A warm, spreadable base makes assembling these a breeze.
Chill Before Slicing: Grandma’s absolute best secret for getting clean, beautiful rounds that don’t fall apart is to wrap the assembled roll ups tightly in plastic wrap and chill them in the fridge for at least an hour before slicing. This firms up the filling so your knife glides right through, creating perfect, neat pinwheels every time.
Keep the Bacon Crispy: For the best texture contrast against the creamy filling, make sure your bacon is fried up nice and crispy before you crumble it into the mix. This guarantees you get that signature, satisfying crunch in every single bite.
