  • 1 lb italian sausage
  • 6 cups chopped zucchini
  • 2 cups slicked celery
  • 1 ½ cups chopped green pepper
  • 1 cup chopped onion
  • 1 ½ tsp salt
  • 1 can (28 oz) diced tomatoes, undrained
  • ¼ tsp garlic powder
  • 1 tsp dried oregano
  • ½ tsp dried basil
  • 1 ½ tsp Italian seasoning
  • 1 tsp sugar

Instructions

  • In a large stockpot, cook the sausage until no longer pink. Remove with a slotted spoon, and place on some paper towel to drain. Make sure to reserve 1 Tablespoon of drippings.
  • Saute onion and celery in the drippings for about 4 to 5 minutes.
  • Add the sausage and the remaining ingredients , and bring to a boil.
  • Reduce the heat, cover with the lid, and simmer until the vegetables are tender about 20 or 30 minutes.
