Why You’ll Love Grandma’s Pearl Onion and Broccoli Bake

The Ultimate Family Compromise: If your house is split between onion lovers and broccoli fans, this dish brings them together in perfect harmony. Moreover, it’s a wonderful way to serve two incredible vegetables in one stunning casserole.

A Textural Masterpiece: The contrast between the tender vegetables, the smooth cream sauce, and the crispy, buttery cracker topping gives you the perfect bite every single time.

Remarkably Easy & Low-Stress: Made with simple, everyday pantry staples, this recipe comes together quickly. Therefore, it is a brilliant choice for busy weeknight dinners or casual weekend gatherings.

Kid-Approved Greens: The rich, savory sauce and crunchy topping make this dish a secret weapon for getting selective eaters to finish every single piece of broccoli on their plates.

Grandma’s Cooking Tips for Perfect Broccoli and Onion Bake

Mind the Vegetable Sizes: To make sure every bite is easy to eat and handles the cream sauce beautifully, cut your broccoli into small, bite-sized florets. If your pearl onions are on the larger side, you can cut them in half. As a result, they match the broccoli perfectly.

Achieve the Perfect Crunch: When tearing the bread and pulsing them in the food processor for the topping, leave a few slightly larger pieces instead of grinding them into a fine dust. With this in mind, those variable crumbles create a much better, rustic crunch once baked!

Let it Rest Slightly: Give the casserole about 5 minutes to rest on the counter after pulling it out of the oven. This allows the hot cream sauce to settle and thicken up just a bit. As a result, it is much easier to scoop and serve.

What to Serve with Pearl Onion and Broccoli Bake

Equipment

  • 2 medium pot
  • 2 large spoon
  • 1 drainer
  • 1 large saucepan
  • 1 whisk
  • 1 13×9-inch baking dish
  • 1 food processor or blender

Ingredients

  • 2 pkg (16 oz each) frozen broccoli florets.
  • 1 pkg (14.4 oz ) pearl onions
  • ½ cup butter, divided
  • ¼ cup all purpose flour
  • ¾ tsp salt
  • tsp pepper
  • 2 cups milk
  • 6 oz cream cheese, cubed
  • 1 cup shredded cheddar cheese
  • 2 cups soft bread crumbs

Instructions

  • Preheat the oven to 350°.
  • Cook the broccoli in 1-inch of water, until almost tender.
  • Drain, then cook pearl onions in 1-inch of water until almost tender. Drain.
  • Transfer both to a greased 13×9 inch baking dish.
  • In a large saucepan, melt ¼ cup of butter. Whisk in the flour, salt, and pepper until smooth.
  • Gradually whisk in the milk. Bring to a boil, cook and stir until thickened about 1 to 2 minutes.
  • Reduce the heat, stir in the cream cheese until blended. Add to the vegetables, stir gently to coat.
  • Sprinkle with the cheddar cheese. Melt the remaining butter, and toss with the bread crumbs. Sprinkle over the bread crumbs.
  • Bake uncovered, until the topping is golden brown, about 25 to 30 minutes.

Notes

When grandma taught me the first time how to make soft bread crumbs, she had me to tear the bread into pieces.  Then she gave me the choice of using the food processor or blender.  You can choose your favorite of the two to use as well.  Next, I covered and pulsed until the crumbs were formed.
One slice of bread yields about 1/2 to 3/4 cups of crumbs.
