Equipment

  • 2 medium pot
  • 2 large spoon
  • 1 drainer
  • 1 large saucepan
  • 1 whisk
  • 1 13x9-inch baking dish
  • 1 food processor or blender

Ingredients

  • 2 pkg (16 oz each) frozen broccoli florets.
  • 1 pkg (14.4 oz ) pearl onions
  • ½ cup butter, divided
  • ¼ cup all purpose flour
  • ¾ tsp salt
  • tsp pepper
  • 2 cups milk
  • 6 oz cream cheese, cubed
  • 1 cup shredded cheddar cheese
  • 2 cups soft bread crumbs

Instructions

  • Preheat the oven to 350°.
  • Cook the broccoli in 1-inch of water, until almost tender.
  • Drain, then cook pearl onions in 1-inch of water until almost tender. Drain.
  • Transfer both to a greased 13x9 inch baking dish.
  • In a large saucepan, melt ¼ cup of butter. Whisk in the flour, salt, and pepper until smooth.
  • Gradually whisk in the milk. Bring to a boil, cook and stir until thickened about 1 to 2 minutes.
  • Reduce the heat, stir in the cream cheese until blended. Add to the vegetables, stir gently to coat.
  • Sprinkle with the cheddar cheese. Melt the remaining butter, and toss with the bread crumbs. Sprinkle over the bread crumbs.
  • Bake uncovered, until the topping is golden brown, about 25 to 30 minutes.

Notes

When grandma taught me the first time how to make soft bread crumbs, she had me to tear the bread into pieces.  Then she gave me the choice of using the food processor or blender.  You can choose your favorite of the two to use as well.  Next, I covered and pulsed until the crumbs were formed.
One slice of bread yields about 1/2 to 3/4 cups of crumbs.
