  • aluminum foil
  • 1 knife
  • 1 baking sheet
  • 1 large fork
  • 1 whisk

Ingredients 

  • cup all-purpose flour
  • ½ tsp salt
  • ¼ tsp pepper
  • 2 large eggs
  • 1 cup panko bread crumbs
  • ½ cup grated Parmesan cheese
  • cooking spray
  • 2 Tbsps garlic and herb seasoning blend
  • 1 lb tilapia fillets

Instructions

  • Preheat the oven to 450°.
  • In a shallow bowl mix flour, pepper, and salt.
  • In a second bowl whisk the eggs.
  • In the third bowl toss the bread crumbs with the cheese and the seasoning blend.
  • Cut the tilapia fillets into 1 inch wide strips. Dip the fish into the flour mixture to coat both sies. Shake off the excess.
  • Dip into the eggs and then dip into the crumb mixture. Pat to help the coating to adhere.
  • Place on the foil lined baking sheet coating with some cooking spray. Lightly spray the tops with some cooking spray until the crumbs appear to be mositened.
  • Bake about 10 to 12 minutes or until golden brown, and the fish just begins to flake easily with a fork.
