It is a fantastic, heavy savory dish to balance out your breakfast table, especially when served right alongside a towering sweet stack of my Old-Fashioned Buttermilk Pancakes.

Grandma’s Tips

Whisk Constantly for Smooth Grits: To prevent lumps from forming in your grits, make sure to whisk them vigorously into the boiling liquid in a steady stream. Keep stirring frequently as they simmer to ensure they turn out perfectly smooth and creamy.

Drain the Sausage Well: After browning your breakfast sausage in the skillet, make sure to drain off the excess grease thoroughly before layering it into the casserole. This keeps the dish rich and flavorful without becoming oily.

Make It the Night Before: This casserole is an absolute dream for meal prepping. You can completely assemble the dish the evening before, cover it tightly with foil, and store it in the refrigerator overnight. In the morning, just pop it right into the oven—you may just need to add a few extra minutes to the bake time since it’s starting cold.
