Grandma’s Tips for the Best Broccoli Casserole
Casseroles are wonderfully forgiving, but a few quick tricks will ensure your bake turns out perfectly rich and never soggy:
- Drain the Broccoli Well: Excess water is the enemy of a rich cheese sauce! Whether you use fresh par-boiled broccoli or frozen florets, make sure to drain and pat them completely dry before mixing them with the sauce.
- Shred Your Own Cheese: Pre-shredded bagged cheese is coated in anti-caking agents that prevent it from melting smoothly. Grating a block of sharp cheddar fresh takes just a minute and yields a far creamier, lump-free sauce.
- Add a Crunchy Topping: For the ultimate texture contrast, top your casserole with crushed buttery crackers or toasted croutons right before baking to get a golden, crunchy crown.
- Let It Rest Before Serving: Allow the casserole to sit for about 5 minutes out of the oven before scooping. This gives the cheese sauce time to set up so it hugs the broccoli instead of pooling at the bottom of the dish.
