Why You’ll Love Grandma’s Country Potato Pancakes

The Ultimate Crunchy Texture: Thanks to Grandma’s traditional method, these pan-fried beauties get those shatteringly crisp, lacey edges that everyone fights over at the table.

Incredibly Budget-Friendly: Made with simple, inexpensive pantry staples like potatoes, onions, and eggs, this recipe delivers maximum comfort without breaking the bank.

Wonderfully Versatile: They pair beautifully with sweet apple sauce, rich sour cream, or even a side of smoky bacon, making them perfect for any meal of the day.

Grandma’s Special Tips for the Perfect Potato Pancakes

Squeeze Out Every Drop of Moisture: The number one secret to achieving that legendary crispy crunch is getting the shredded potatoes as dry as humanly possible. Wrap your grated potatoes and onions in a clean kitchen towel or cheesecloth and squeeze with all your might—the less water left behind, the crispier your pancakes will be!

Keep the Oil Hot: Make sure your frying oil is hot and shimmering before you drop the batter in. If the oil isn’t hot enough, the potatoes will absorb it like a sponge and turn out greasy instead of beautifully crisp and golden.

Serve Them Fast and Hot: Potato pancakes are at their absolute peak right out of the skillet. If you are making a big batch, slide the cooked pancakes onto a wire rack set inside a baking sheet and keep them warm in a 200 degree oven while you fry the rest!
