Instructions
Peel then finely grate the potatoes. Drain any liquid.
Add the eggs, salt, flour, onion, and baking powder.
In the skillet, add the oil to the depth of ⅛ inch, and heat it over medium high heat about 375°.
Drop the batter by using a heaping tablespoon in the hot oil. Flatten into patties.
Fry until golden brown, turning them over only once. Serve them immediately.
