Equipment

  • 1 15x10x1 inch baking pan
  • 1 whisk
  • 2 large spoon
  • 1 small bowl
  • 1 dutch oven
  • 1 toothpick
  • 1 small saucepan

Ingredients

  • 2 day old hard rolls
  • 1 large egg, lightly beaten
  • ½ cup leftover mashed potatoes
  • 2 Tbsp all-purpose flour
  • ¼ cup butter, cubed
  • ½ cup water
  • 2 tsp canola oil
  • a dash of ground nutmeg

Instructions

  • tear the 2 day old hard rolls into ½ inch pieces. Place in the 15x10x1 inch baking pan. Drizzle with water and squeeze dry.
  • In the large skillet heat the oil over medium high heat. Add the torn rolls. Cook and stir until lightly toasted for about 1 to 2 minutes.
  • In the small bowl combine the eggs, nutmeg, bread and potatoes. Make sure to add enough flour to achieve a shaping consistency.
  • With your hands floured, shape the mixture into 3 inch balls.
  • Fill the dutch oven ⅔ full with water. Bring to a boil. Carefully add the dumplings. I use a large slotted spoon, to keep from splattering the hot water.
  • Reduce the heat and simmer uncovered, until a toothpick inserted into the center of the dumplings comes out clean about 8 to 10 minutes.
  • In a heavy saucepan, melt the butter over medium heat.
  • Heat until golden brown about 4 to 6 minutes.
  • Serve the warm dumplings with butter.
