- 1 small bowl
- 1 large spoon
- 1 whisk
- 1 large Slotted spoon
- 1 ½ cup measuring cup
Ingredients
- 1 medium ear of sweet corn
- 8 Bibb or Boston Lettuce Leaves
- 1 medium cucumber, chopped
- 2 tsp creamy peanut butter
- 1 cup shredded cabbage
- 2 tsp soy sauce
- 1 medium tomatoes, chopped
- 3 tsp rice vinegar
- 1 small red onion , chopped
- ½ cup thai chili sauce
- 1 Tbsp fresh basil, minced
- ½ Tbsp fresh cilantro, minced
- 1 tbsp fresh mint, minced
Instructions
- Cut the corn off of the cobb, and place it in a large bowl.
- Add the cucumber, tomatoes, onion, herbs, and cabbage.
- In another bowl, whisk together the soy sauce, chili sauce, vinegar, and peanut butter.
- Pour over the vegetable mixture and toss to coat. Let it stand for 20 minutes.
- Use a slotted spoon to place ½ cup of salad into each of the lettuce leaf. Fold the lettuce over the filing, and they are ready to serve.
