Ingredients 

  • 1 medium ear of sweet corn
  • 8 Bibb or Boston Lettuce Leaves
  • 1 medium cucumber, chopped
  • 2 tsp creamy peanut butter
  • 1 cup shredded cabbage
  • 2 tsp soy sauce
  • 1 medium tomatoes, chopped
  • 3 tsp rice vinegar
  • 1 small red onion , chopped
  • ½ cup thai chili sauce
  • 1 Tbsp fresh basil, minced
  • ½ Tbsp fresh cilantro, minced
  • 1 tbsp fresh mint, minced

Instructions

  • Cut the corn off of the cobb, and place it in a large bowl.
  • Add the cucumber, tomatoes, onion, herbs, and cabbage.
  • In another bowl, whisk together the soy sauce, chili sauce, vinegar, and peanut butter.
  • Pour over the vegetable mixture and toss to coat. Let it stand for 20 minutes.
  • Use a slotted spoon to place ½ cup of salad into each of the lettuce leaf. Fold the lettuce over the filing, and they are ready to serve.
