Grandma’s Tips for the Best Seasoned Ribeye Roast
Cooking beef to perfection comes down to a few time-tested tricks Grandma always swore by for the most tender, flavorful roast:
- Bring to Room Temperature First: Take your ribeye roast out of the refrigerator at least 30 to 45 minutes before cooking. Bringing the meat to room temperature ensures it roasts evenly from edge to center.
- Pat the Meat Dry: Before rubbing on your oil and herbs, pat the entire roast completely dry with paper towels. A dry surface helps the seasoning stick better and gives you that coveted golden brown outer crust.
- Use a Meat Thermometer: Avoid guessing game times! Insert a digital meat thermometer into the thickest part of the roast to hit your desired doneness (pull it out at 125 degrees for rare, $135^\circ\text{F}$ for medium-rare).
- Don’t Skip the Rest Period: Always let your roast rest on a cutting board tented loosely with foil for 15 to 20 minutes before slicing. This allows the juices to redistribute throughout the meat rather than spilling out onto the board.
