Place the ribeye roast on the rack in the roasting pan, with the fat side up and rub with the seasonings.
Roast uncovered until the meat reaches the desired doneness you want. (If you want medium rare the thermometer should read 135°, medium 140°, and well which is what I do 160°),
Roast should take about 1 ½ to 2 hours, depending on the doneness.
Remove from the oven and tent with aluminum foil. Let it stand for about 10 minutes before slicing.
