Equipment

Ingredients 

  • 1 pkg white cake mix (regular size)
  • 2 large eggs, room temperature
  • ½ cup buttermilk
  • 1 cup cola
  • ¼ cup baking cocoa
  • ½ cup butter, melted
  • 1 tsp vanilla extract
  • 1 ½ cups miniature marshmallows

Fudge Frosting

  • ¼ cup baking cocoa
  • cup cola
  • 4 cups confectioners' sugar
  • ½ cup butter, cubed
  • 1 cup chopped pecans, toasted

Instructions

  • In a large bowl, combine the first 7 ingredients, and beat the mixture on low speed for about 30 seconds.
  • Beat on medium speed for 2 minutes. Then fold in the marshmallows.
  • Pour into a greased 13×9 inch baking pan. Bake at 350° for about 35 to 40 minutes or until a toothpick inserted in the center comes out clean.
  • Cool on a wire rack for 15 minutes.
  • For the frosting while waiting for the cake to cool, combine butter and cocoa in a small saucepan.
  • Cook over low heat until the butter is melted. Stir in the cola until blended, Bring to a boil, stirring constantly.
  • Remove from the heat, stir in the confectioners' sugar until smooth. Fold in pecans.
  • Spread over the cake. Let it stand for 20 minutes before cutting the cake.

Notes

If you have a allergy to nuts as I do, you can do as Grandma always did for me and leave them out (optional).
Remember Grandma’s 15 minute rule and let the cake cool in the 13×9 inch baking pan, prior to trying to add the frosting, unless you want to see it melting everywhere.
