Ingredients 

  • 3 lbs fresh baby carrots
  • ½ cup butter, cubed
  • ¼ cup Brandy
  • ½ cup honey
  • ¼ tsp pepper
  • ½ tsp salt
  • ¼ cup minced fresh parsley

Instructions

  • In a large skillet bring ½ inch of water to a boil. Add the carrots.
  • Cover and let cook until crisp tender for about 5 to 9 minutes. Drain ad set aside.
  • In the same skillet cook the honey and butter over medium heat until the butter is melted.
  • Remove from the heat and stir in the brandy.
  • Bring to a boil and cook until the liquid is reduced to about ½ cup.
  • Add the carrots, salt, pepper, and parsley and heat through.
  • Transfer to a large bowl, before serving.
