Instructions
In a large skillet bring ½ inch of water to a boil. Add the carrots.
Cover and let cook until crisp tender for about 5 to 9 minutes. Drain ad set aside.
In the same skillet cook the honey and butter over medium heat until the butter is melted.
Remove from the heat and stir in the brandy.
Bring to a boil and cook until the liquid is reduced to about ½ cup.
Add the carrots, salt, pepper, and parsley and heat through.
Transfer to a large bowl, before serving.
