Ingredients 

  • ¼ cup baking cocoa
  • 1 ½ cups all-purpose flour
  • 1 cup sugar
  • ¼ tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 ⅓ cups mashed ripe bananas, (about 3 medium)
  • 1 large egg, room temperature
  • cup canola oil
  • 1 cup (6 oz) miniature semisweet chocolate chips

Instructions

  • Preheat the oven to 350°.
  • Whisk together the first 6 ingredients.
  • In another bowl whisk the bananas, egg and oil until fully blended. Add to the flour mixture and stir just until moistened. Fold in the chocolate chips.
  • Fill greased or lined muffin cups ¾ full.
  • Bake for about 20 to 25 minutes or until a toothpick inserted in the center of the muffin comes out clean.
  • Let cool for about 5 minutes before removing from the muffin tin to a wire rack. Serve warm.
