Ingredients 

  • ½ cup finely chopped onion
  • 3 celery ribs, finely chopped
  • ½ medium green pepper, chopped
  • 1 Tbsp butter
  • ½ medium sweet red pepper, chopped
  • 2 cups chicken broth
  • ¼ tsp pepper
  • 2 cups uncooked instant rice
  • ½ tsp salt

Instructions

  • In a skillet, saute the celery, peppers, and onion in butter over medium heat for about 2 to 3 minutes or until crisp-tender.
  • Remove from the heat, and set aside.
  • In a saucepan, bring the broth to a full broil. Remove from the heat.
  • Quickly stir in the rice, celery mixture, salt and pepper.
  • Cover and let stand for about 6 to 7 minutes. Stir before serving.
