Ingredients 

  • 1 pkg (32 oz) frozen cubed hash browns
  • ½ cup canola or vegetable oil
  • 1 ½ cups chopped onion
  • ½ tsp salt
  • 4 to 5 cups chopped cooked corned beef
  • 8 large eggs
  • 2 Tbsp minced fresh parsley

Instructions

  • Preheat the oven to 325°.
  • In a large skillet, cook hash browns and onion in the oil until the potatoes are browned, and the onions are tender.
  • Remove from the heat, stir in the corned beef and salt.
  • Make 8 wells in the hash browns. Break one egg into each well. Sprinkle with salt and pepper.
  • Cover and bake for about 25 minutes or until the eggs reach the desired doneness. Garnish with parsley.
