Instructions
Place 2-inches of water in a 6-quart stockpot.
Add carrots and the onions, and bring to a boil.
Reduce the heat, let it simmer, covered, until the carrots are crisp-tender about 10 to 12 minutes.
Drain the vegetables. Toss with the remaining ingredients.
