Equipment

  • 3 small bowls
  • 3 spoons
  • 1 large spatula
  • 1 whisk or hand beater
  • 1 drainer
  • 1 6 cup mold

Ingredients 

  • 1 can (20 oz) crushed pineapple, drained
  • 2 cups miniature marshmallows
  • 1 pkg (8 oz) cream cheese, softened
  • ½ cup mayonnaise
  • 12 red maraschino cherries, chopped and patted dry
  • ½ cup chopped walnuts
  • 12 green maraschino cherries, chopped and patted dry
  • 1 cup heavy whipping cream

Instructions

  • In a small bowl, combine the crushed pineapple and marshmallows.
  • Set aside until marshmallows are softened, about 15 minutes.
  • Meanwhile, in another small bowl, beat the cream cheese and mayonnaise until smooth.
  • Stir into marshmallow mixture. Fold in cherries and walnuts.
  • In a bowl, beat whipping cream until soft peaks form. Fold into pineapple mixture.
  • Spoon into a 6 cup mold, and freeze overnight.
  • Let stand at room temperature for 20 minutes , and unmold onto a serving plate when ready to serve.

Notes

You can omit the walnuts if you have a nut allergy like I do.
