  • 1 medium bowl

Ingredients 

  • ½ cup canola oil or vegetable oil
  • ½ cup white vinegar
  • ½ cup sugar
  • 10 oz fresh baby spinach (about 13 cups)
  • ½ tsp celery seed
  • 1 small red onion , thinly sliced
  • 5 hard-boiled large eggs, sliced
  • ½ lb sliced, fresh mushrooms
  • 8 bacon strips, cooled and crumbled.

Instructions

  • In a medium bowl, whisk the first 4 ingredients , until the sugar is dissolved.
  • In a 13x9-inch dish, layer half of each of the following ingredients. Layer spinach, onion, mushrooms, and eggs. Repeat this layer. Then drizzle with the dressing, and top with the crumbled bacon.
