  • 1 6-quart slow cooker (with a lid)
  • 1 serving platter
  • 1 small saucepan
  • 1 large spoon

Ingredients 

  • 1 beef chuck roast (about 3 lbs), cubed
  • 2 Tbsps cold water
  • 1 Tbsp canola oil
  • ½ cup fresh pearl onions, peeled
  • 1 tsp salt
  • cup oil-packed sun dried tomatoes, drained and chopped
  • 1 ⅛ cups beef broth
  • 1 tsp cornstarch
  • 1⅛ Tbsp Italian seasoning
  • 1 garlic clove, minced
  • ½ cup sliced ripe-olives, drained

Instructions

  • In a large skillet, brown the eat in oil in batches. drain.
  • Transfer to a 6 quart slow cooker. Sprinkle with italian seasoning, garlic and salt. Top with tomatoes and olives. Add the onions and broth.
  • Cook covered on low until the meat is tender for about 6 to 8 hours.
  • With a slotted spoon, remove the beef and onions to a serving platter, and keep it warm.
  • Pour the cooking juices into a small saucepan. Combine the cornstarch and water until smooth. Gradually stir into cooking juices. Bring to a boil, cook and stir until thickened about 2 minutes.
  • Spoon over the beef mixture, and serve.
