Ingredients 

  • ¼ cup sugar
  • cup all-purpose flour
  • 2 cups milk
  • ¼ tsp salt
  • 3 large egg yolks, room temperature, lightly beaten
  • 1 tsp vanilla extract
  • 2 Tbsps butter
  • 3 medium, firm bananas
  • 1 pastry shell (9-inch), baked
  • optional: whipped cream and additional sliced bananas

Instructions

  • In a saucepan, combine sugar, salt, flour. Stir in milk and mix well.
  • Cook over medium-high heat until mixture is thickened and bubbling.
  • Cook and stir for about 2 minutes longer. Remove from the heat.
  • Stir a small amount into the egg yolks, then return it all to the saucepan.
  • Bring to a gentle boil. Cook and stir for about 2 minutes. Remove from the heat.
  • Add the butter and vanilla, and cool slightly.
  • Slice t. Pour the filling over the top. he bananas into the pastry shell
  • Cool on a wire rack for about 1 hour. Store in the refrigerator.
  • If desired, before serving, garnish with whipped cream and sliced bananas.

Notes

Donn't forget you have to bake the pie crust for about 10 to 20 minutes till golden brown, prior to filling it with the bananas and the rest of the mixture.
