  • 1 3-quart shallow baking dish
  • 1 toothpick
  • 1 drainer

Ingredients 

  • 2 cups all-purpose flour
  • 4 tsps baking powder
  • 2 Tbsp canola oil
  • 2 ½ cups sugar (divided)
  • 1 cup milk
  • 2 cans (14 ½ oz-each) water-packed pitted tart red cherries, well-drained
  • ½ tsp almond extract
  • optional: whipped cream or ice cream

Instructions

  • Preheat oven to 375°.
  • In a bowl, combine the flour, oil, baking powder, sugar, and milk. Pour into a greased shallow 3-quart baking dish.
  • In another bowl, combine the cherries, remaining sugar, and the extract. Spoon over the batter.
  • Bake for about 40 to 45 minutes or until a toothpick inserted in the cake comes out clean.
  • Serve warm, with whipped cream or ice cream if desired.
