Instructions
Preheat oven to 375°.
In a bowl, combine the flour, oil, baking powder, sugar, and milk. Pour into a greased shallow 3-quart baking dish.
In another bowl, combine the cherries, remaining sugar, and the extract. Spoon over the batter.
Bake for about 40 to 45 minutes or until a toothpick inserted in the cake comes out clean.
Serve warm, with whipped cream or ice cream if desired.
