Instructions
Preheat the oven to 350°.
Sprinkle the chicken breast with salt and pepper.
In a large cast iron skillet, heat 2 tablespoons of butter over medium high heat.
Brown the chicken on both sides. Place in the oven until a thermometer reads 165° for about 12 to 15 minutes.
In a small saucepan combine the sugar and wine. Bring to a boil and cook uncovered until the liquid is reduced by half about 5 minutes.
Reduce the heat to low and whisk in the remaining butter about 1 tbsp at a time until it is blended.
Stir in the cherries and serve with the chicken.
