Ingredients 

  • 4 boneless skinless chicken breast halves (8 oz each)
  • ½ cup frozen pitted dark sweet cherries, thawed
  • ¼ tsp salt
  • 1 Tbsp sugar
  • ¼ tsp pepper
  • 7 Tbsp butter, divided
  • cup dry red wine

Instructions

  • Preheat the oven to 350°.
  • Sprinkle the chicken breast with salt and pepper.
  • In a large cast iron skillet, heat 2 tablespoons of butter over medium high heat.
  • Brown the chicken on both sides. Place in the oven until a thermometer reads 165° for about 12 to 15 minutes.
  • In a small saucepan combine the sugar and wine. Bring to a boil and cook uncovered until the liquid is reduced by half about 5 minutes.
  • Reduce the heat to low and whisk in the remaining butter about 1 tbsp at a time until it is blended.
  • Stir in the cherries and serve with the chicken.
